Let’s learn how to taste an extra virgin olive oil.
Extra virgin olive oil is a typical ingredient of italian cuisine.
A good extra virgin olive oil should have a low acidity.
Acidity is the concentration of oleic acid in olive oil. Less acetic oil you will have in an olive oil better will be the oil.
The three basic categories to consider when tasting olive oil are delicate, medium, and intense.
3 main positive attributes of an extra virgin olive oil :
- FRUITY – fruitiness is the aroma you will smell with your nose in the first part of the tasting.
- BITTER – bitterness on the tongue. Oil made from greener fruit can be distinctly bitter.
- PUNGENT – Pungency is a peppery sensation, detected in the throat due to Polyphenols, that are a type of numerous health-protective antioxidants that are found in extra virgin olive oil.
